The Adult Faith Formation Committee helps create meaningful and inspiring opportunities for adults to grow in their faith, deepen their understanding, and connect with others on their spiritual journey. We offer classes on Sunday mornings at 9:00 am in Room 102, and the Sermon Based Bible Study meets at 11:00 am on Thursdays in the library. We also offer other experiences to help you connect with God through the arts, writing, and nature.

Healthy Recipes
During Lent, we included healthier choices in the food offerings during Fellowship Time, as a way of inviting people to thinking about how to better care for our bodies. Eating healthy during Lent can be a meaningful spiritual practice, aligning physical well-being with mindfulness and practicing moderation to cultivate gratitude and self-control.
A special note, we suggest making the energy bite recipes. People LOVE them!
MELISSA’S DOUBLE CHOCOLATE ENERGY BITES
These have both non-dairy chocolate chips and raw cacao powder. Feel free to mix it
up and create your own. I keep them in the freezer, so it’s like eating a
frozen Snickers bar! These amounts are very approximate since I don’t measure,
but it’s hard to go wrong!
Ingredients
· 8-10 large Medjool dates (I like to buy those with
pits; they stay softer longer)
· Approximately ¼ cup non-dairy chocolate chips
· 1/3 cup nuts (pecans, walnuts, peanuts, cashews, pistachios)
· 1 to 2 tsp raw cacao powder or cocoa powder
· Big Spoonful of any nut butter, about ¼ cup
· Pinch of salt, optional
· Capful of vanilla
Optional add-ins:
· Shredded coconut, Goji berries, raisins, craisins, dried cherries, dried apricots
· Seeds like sesame, chia, hemp, sunflower, ground flax
· Rolled oats (can replace some of the cacao)
· Cinnamon, vanilla or Maca powder
Directions
If using dates with the pits, use a paring knife to make a lengthwise cut down the date in order to pull open and expose/remove the pit. Remove any little stems that may be on one end. Roughly chop up the dates and add to food processor. Add all other ingredients and process until well mixed, about 30 seconds or so. Test to make sure the mix can be formed into a ball; if not, add a little bit more nut butter. Using clean hands, spoon 1-2 Tbs of the “dough” into your hands and form into balls. You can also mix dough by hand in a bowl if you don’t have a
food processor; The Vitamix does not work well for these. Leave in a ball, or press into a mini muffin pan and top with half a pecan or walnut, and freeze.
Notes:
· Try Enjoy Life or Trader Joe’s 72% cacao chips, or sometimes I find 85% dark chips—the dates are sweet enough for the very dark chocolate. I recommend not using anything less than 72%. You can also use cocoa nibs instead, or just a bit more cacao powder.
· Be careful not to go overboard on the cacao powder or they may taste chalky. If this happens, just add more of the other ingredients and pulse again.
· Find the Medjool dates in the produce section; they are far superior than Deglet
dates, and can stay in your pantry a long time. If dates are stiff, soak them
in hot water a few minutes. Be sure to remove the pits! Also, very occasionally you may cut into one
and see some brown/black dust. This is mold; just toss those out; don’t worry,
it doesn’t happen very often.
· TRY STUFFED DATES. No time to get out the food processor? Simply split the top of the date lengthwise, remove the pit and stuff the date with nut butter and a 3 or 4 non-dairy chocolate chips or half a pecan or walnut. In the Mideast, they stuff the date with raw honey and a generous dose of cinnamon—yum!
BANANA, COCONUT AND PECAN MUFFINS
Makes about 9
Ingredients:
1-1/4 c flour
1 tsp baking powder
½ tsp salt
½ tsp orange zest
½ c plus 2 Tbs pecans, toasted and chopped
¾ c unsweetened flaked coconut, divided
2 very ripe bananas, mashed
½ c applesauce
2/3 c sugar (date sugar if possible)
1 vegan egg (flax egg or egg substitute like Bob’s Red Mill)
1 tsp vanilla
Directions:
- Put oven rack in middle position and preheat to 375. Line muffin cups with paper liners.
- Whisk together flour, baking powder, salt, orange zest, ½ c pecans and ½ c coconut in medium bowl.
- In another bowl, whisk together bananas, applesauce, sugar, flax egg and vanilla until well combined. (Note: Flax egg = 1 Tbs ground flax + 2-1/2 Tbs water.) Stir; let sit 5 min
- Fold flour mixture into banana mixture until flour is just moistened.
- Divide batter among lined muffin cups. Sprinkle muffins with remaining ¼ c coconut plus 2 tbs of chopped pecans.
- Bake for about 25 minutes or until muffins are puffed and golden.
- Transfer muffins to a rack to cool. Enjoy!
NO BAKE ENERGY BITES
yield: 20-25 Energy Bites
This No-Bake Energy Bites recipe is easy to make, full of feel-good ingredients, and irresistibly delicious!
INGREDIENTS
1 cup old-fashioned oats
2/3 cup toasted shredded coconut (sweetened or unsweetened)
1/2 cup creamy peanut butter
1/2 cup ground flaxseed
1/2 cup semisweet chocolate chips (or vegan chocolate chips)
1/3 cup maple syrup or agave
1 tablespoon chia seeds (optional)
1 teaspoon vanilla extract
INSTRUCTIONS
- Stir everything together in a large mixing bowl or food processor until thoroughly combined.
- Cover and chill in the refrigerator for 1-2 hours, to help the mixture stick together more easily.
- Roll into mixture into 1-inch balls.
- Enjoy immediately! Or refrigerate in a sealed container for up to 1 week, or freeze for up to 3 months.
In July 2023, Hope explored the topic of mental health and mental illness. Many people struggle with this, either personally or through a loved one.
Our Sunday worship services explored the role of the Church in caring for those who struggle.
We also had a speaker series with mental health professionals who will discuss a variety of topics and how to access care.
